Zhajiangmian is a traditional noodle dish originating from northern China, renowned for its unique sauce and abundant toppings. The noodles are chewy and smooth, paired with meticulously stir-fried zhajiang sauce, each bite filled with rich sauce aroma and a layered flavor.

Noodles: 500g (preferably handmade or sliced noodles)
Ground pork: 200g
Soybean paste: 100g
Sweet flour paste: 50g
Cucumber: 1 (sliced into threads)
Bean sprouts: 100g (blanched)
Carrot: half (sliced into threads)
Leek or green onion: as needed (chopped)
Ginger and garlic, finely chopped: as needed
Cooking oil: as needed
Soy sauce, sugar, salt, cooking wine: for seasoning as needed
👉🏻✨DIRECTIONS:
Prepare the Sauce: Mix the soybean paste and sweet flour paste evenly. Adjust the taste with soy sauce, sugar, and salt as preferred.
Stir-Fry the Zhajiang Sauce: Heat an appropriate amount of cooking oil in a pan, add finely chopped ginger and garlic, stir-fry until fragrant. Add the ground pork and stir-fry until it changes color. Pour in the prepared sauce, stir-fry over low heat until the sauce thickens, optionally adding cooking wine for enhanced aroma.
Cook the Noodles: Cook the noodles until done, then remove and rinse with cold water to drain, maintaining their chewiness.
Serve: Arrange the noodles on a plate, top with cucumber threads, bean sprouts, carrot threads, pour over the stir-fried zhajiang sauce, and sprinkle with chopped leek or green onion.
