Xianrou Guokui is a traditional snack originating from ancient streets and alleys, especially famous in Sichuan and other places. It attracts countless diners with its crispy crust and delicious meat filling. The crust of the guokui is generally thick, covered with sesame seeds, and turns golden yellow after baking. A bite reveals a crispy texture. The internal meat filling is tender and juicy, forming a stark contrast with the crust, allowing diners to experience different layers of taste during their meal.

👉🏻✨DIRECTIONS:

  1. Place the flour in a bowl, add salt, and then add yeast dissolved in warm water. Knead into a dough.

  2. Place the dough on the table and continue kneading for about 5 minutes until it becomes elastic. Cover with plastic wrap and let it rest for 30 minutes.

  3. Put the ground pork in a glass bowl, add appropriate amounts of cooking wine, salt, chopped scallions, oyster sauce, soy sauce, and pepper. Mix in 2 eggs and stir well to prepare the meat filling.

  4. After the dough has rested, divide it into several small portions, roll them into balls, cover with plastic wrap, and let them rest for another 15 minutes.

  5. Take a rested dough portion, flatten it with your palm, roll it into a circular skin, and then wrap an appropriate amount of meat filling inside. Seal the opening tightly.

  6. Gently flatten the wrapped guokui into a flat shape and sprinkle sesame seeds on the surface.

  7. Place the shaped guokui in a preheated oven or electric skillet and bake until both sides are golden and crispy.

👉🏻✨TIPS

  • When fermenting the dough, only a slight fermentation is needed. This will create a "semi-fermented" effect for the guokui, making it crispy outside and soft inside.

  • When baking the guokui, you can adjust the baking time and temperature according to personal taste to achieve the best texture.
