  1. Prepare Dough: Dissolve dry yeast in warm water and let it sit for 5 minutes. Combine all dough ingredients in a large bowl, pour in yeast water, mix until shaggy, then knead into a smooth dough. Cover with plastic wrap and let it rise until doubled in size (about 1.5 hours).

  2. Prepare Fillings: Peel tomatoes, cut into small pieces, and press out excess moisture. Dice green bell pepper and mix with tomatoes, garlic and parsley mixture, Himalayan pink salt, freshly ground black pepper, and cumin powder. Slice potatoes thinly, cut sausage into small rounds, and shred onion.

  3. Punch down the risen dough, let it rest for 15 minutes, then divide into two portions. Roll each portion into a thin oval crust.
