3 eggs

Wash the tomatoes and cut them into small cubes. Beat the eggs in a bowl with a little salt until well mixed and set aside.
Pour an appropriate amount of vegetable oil into a pan. Once the oil is hot, pour in the beaten eggs. When the egg mixture solidifies into pieces, gently stir with a spatula until the eggs are golden brown and fully cooked. Remove and set aside.
Leave some oil in the pan and add the cubed tomatoes, stir-frying until they release their juices and soften.
Add an appropriate amount of sugar and salt to taste. Optionally, add a little soy sauce for added flavor.
Finally, pour the cooked eggs back into the pan, stir-fry evenly with the tomatoes, and sprinkle with chopped green onion before serving.
