Tomato Chèvre Tarte Tatin is a French dessert that combines the elements of the classic Tarte Tatin with modern creativity. Featuring creamy goat cheese (Chèvre) and juicy, tangy tomatoes, it is paired with a crispy puff pastry, retaining the essence of the traditional upside-down tart while incorporating novel flavors. Prepare Tomatoes: Cut the tomatoes in half vertically, remove the top hard cores, and scoop out some of the flesh to prevent excessive moisture from affecting the pastry's texture.
Make Syrup: In an oven-safe skillet, pour in granulated sugar and heat over medium heat, stirring constantly until the sugar dissolves. Add lemon juice and balsamic vinegar to form a slightly thick syrup. Add 15 grams of butter, chopped red onion, and thyme, and sauté until fragrant.
Coat Tomatoes with Syrup: Place the prepared tomatoes, cut-side up and skin-side down, into the syrup, and turn to coat the tomatoes evenly.
Bake Tomatoes: Place the skillet in a preheated oven at 200°C (392°F) and bake for 1 hour, until the tomatoes soften and form a caramelized state with the syrup.
Prepare Puff Pastry: Allow the frozen puff pastry to thaw at room temperature, then roll it into a thin sheet slightly larger than the skillet. Place the puff pastry in the refrigerator to keep the butter cold.
Assemble and Bake: Remove the tomatoes from the oven, cover them with the puff pastry, and tuck the edges into the gap between the skillet and the tomatoes. Cut small slits in the puff pastry with a knife, then return it to the oven and bake for an additional 30 minutes.
Flip and Decorate: Allow the tart to cool slightly, then invert it onto a plate by placing another plate over the skillet and flipping it over. Finally, cut the remaining 15 grams of butter into small pieces and sprinkle them over the tart, along with goat cheese for garnish.
