Marinate the chicken thighs: Dry the boneless chicken thigh meat with a paper towel. Add a little shredded onion, mint leaves, and garlic slices. Then pour in 1 tablespoon of cooking wine. Mix well and marinate for 20 minutes. After that, coat the surface of the chicken thighs with a layer of cornstarch.
Fry the ingredients: Heat some oil in a pan. Put the cornstarch-coated chicken thighs into the pan and fry them over low heat until golden brown and fully cooked on both sides. At the same time, fry the pasteurized egg sunny-side up and wash and shred the lettuce. Set them aside for later use.
Make the sauce: Cut the chili peppers (bird's eye) and green pepper into small pieces, mince the garlic, and chop the mint leaves. Put them in a bowl. Add 2 tablespoons of sweet chili sauce, the juice from half a lemon, and 1 tablespoon of fish sauce. Stir well, and the sauce is ready.
Assemble the rice bowl: Cut the fried chicken steak into pieces and place them on the rice. Then add the shredded lettuce and the sunny-side-up egg. Finally, pour the prepared sauce evenly over the chicken steak.
