Teriyaki sauce: 1 tablespoon of soy sauce, 1 tablespoon of mirin (rice wine), 1 tablespoon of cooking wine (or adjust according to personal taste), sugar to taste, half a teaspoon of grated ginger
Oil: 1.5 tablespoons

Cut the pumpkin in half and scoop out the seeds. Slice the pumpkin with the skin on into approximately half-centimeter-thick pieces.
Mix the soy sauce, mirin, cooking wine, sugar, and grated ginger together to make the teriyaki sauce.
Heat oil in a frying pan and add the pumpkin slices. Fry on medium-low heat until both sides are golden brown, about 6-8 minutes.
Return the fried pumpkin slices to the pan, add the teriyaki sauce, and reduce the heat. Stir-fry until the sauce thickens and coats the pumpkin slices.
