Wash the crab, remove the intestines and inedible parts, chop into bite-sized pieces, and drain.
Mix the ground pork with soy sauce, cooking wine, salt, pepper, starch, and sesame oil, stirring well to marinate.
Beat the egg and add it to the pork mixture, stirring again until combined.
Arrange the crab pieces in their original shape on a plate and evenly spread the pork and egg mixture over them.
Sprinkle with minced garlic, scallion segments, and ginger slices, then steam over high heat for 15-20 minutes until the crab meat is cooked.
Remove from the steamer, drizzle with hot oil, and garnish with chopped scallion before serving.
