Small scallions: as needed (cut into sections, divided into white and green parts)
Fresh ginger: as needed (sliced)
Garlic, minced: as needed
Soy sauce: 2 tablespoons
Dark soy sauce: 1 teaspoon (for coloring)
White sugar: 1 teaspoon
Salt: as needed
Cooking wine: 1 tablespoon
Cooking oil: as needed

Clean the squid, remove the internal organs and black membrane, and cut into strips.
Bring water to a boil in a pot, add ginger slices, cooking wine, and a suitable amount of salt. Blanch the squid until it changes color, then remove and drain.
Pour a suitable amount of cooking oil into a pan and heat to medium-low heat. Add the white part of the scallions and minced garlic, and stir-fry until fragrant over low heat.
Add soy sauce, dark soy sauce, white sugar, and a suitable amount of salt, and mix well to form a sauce.
Add the blanched squid to the sauce and stir-fry evenly to ensure the squid fully absorbs the sauce's flavor.
Finally, sprinkle with the green part of the scallions and stir-fry quickly for a few seconds before removing from the heat.
