Onion: 1 (chopped)

Ginger: 1 small piece (sliced)
Lime leaves: 2
Coriander roots: 1 (washed)
Peanut butter: 2 tablespoons
Brown sugar: 1 tablespoon
Salt: to taste
Cooking oil: as needed
Bamboo or wooden skewers: as needed (for threading the chicken)

Cut the chicken breast into chunks and marinate with salt for 15 minutes.
Add cooking oil to the slow cooker, heat, and add the onion, garlic, and ginger. Stir-fry until fragrant.
Add the curry paste, peanut butter, and brown sugar. Continue stir-frying until the sauce is uniform.
Pour in the coconut milk, add lime leaves and coriander roots, and stir well.

Cover the pot, set to the slow cooking mode, and cook for 4-6 hours until the chicken is tender.
