  • Cherry tomatoes: 1 pint (about 473 milliliters), halved

  • Fresh basil: 1/4 cup (about 12 grams), chopped

  • Fresh parsley: 2 tablespoons (about 10 grams), chopped

  • Lemon: 1, juiced and zested

  • Olive oil: 1/2 cup + 2 tablespoons (about 130 milliliters)

  • Red wine vinegar: 3 tablespoons (about 45 milliliters)

  • Salt: 2 teaspoons (about 10 grams)

  • Black pepper: 2 teaspoons (about 10 grams)

  • Pepperoncini (optional): 4, stemmed and chopped, with 2 teaspoons of their juice

  1. In a large skillet over medium-high heat, add 2 tablespoons of olive oil and the corn kernels. Sauté for 3 minutes. Add the garlic and cook for another 2 minutes, or until fragrant and the corn is tender. Let cool.

  2. Cook the Orzo pasta according to package directions, then drain and let cool.

  3. In a large bowl, combine the Orzo, corn, cherry tomatoes, basil, and parsley. Mix well.

  4. In a medium bowl, combine the pepperoncini, 1/2 cup of olive oil, red wine vinegar, lemon juice and zest, salt, and pepper. Whisk to combine, then pour the dressing over the salad and toss well.

  5. Top with shrimp and gently toss. The salad can be made up to 6 hours in advance and served cold or at room temperature. It can be served as a side salad or a main dish.
