Shrimp Mashed Potato Lettuce Salad
Refreshing summer meal, nutritious & filling!
Last Saturday afternoon, I was wondering what to prepare for my girls' gathering. Then I remembered the potatoes and fresh shrimp in my fridge, and decided to make this salad. While steaming the potatoes, the kitchen was filled with a delightful aroma. When mashing them, the creamy texture was so tempting I couldn't resist a taste. The biggest surprise was the dressing - the perfect balance of lime's zest and mustard's kick. When drizzled over the salad, the colors were so beautiful I had to take a photo for Instagram. My friends loved it, saying it tasted better than restaurant versions!
