Fill a large pot with water and sprinkle in some salt. Bring to a boil. Add the pasta and cook according to package directions until al dente. Drain well.
In a large skillet with high sides, heat olive oil over medium heat. Add the sausage pieces and cook, stirring occasionally with a wooden spoon, until fully cooked through but not too broken up. You want some chunky pieces for texture.
Add the sliced garlic and cook for another minute.
Pour in the heavy cream and reduce the heat to medium-low. Cook for about 3 to 4 minutes or until the sauce thickens.
Stir in the tomato sauce and Italian herb blend. Cook for one minute.
Add the cooked pasta to the sauce, along with the grated Parmesan cheese. Stir well to ensure the pasta is coated with the sauce.
