Trim the spikes on the tail and head of the Mantis Shrimp. Wash and drain well. Sprinkle with some cornstarch and mix evenly. Heat oil in a pan and deep-fry the Mantis Shrimpr until both sides are golden brown. Remove and set aside.
Leave some oil in the pan and sauté the minced ginger, garlic, and onion until fragrant. Add the diced green and red chili peppers and stir-fry briefly. Pour in a little cooking wine and soy sauce for seasoning. Add the fried Prawn Cracker and stir-fry evenly. Finally, sprinkle with salt and pepper mix and a little chili powder. Stir-fry evenly until well-coated and serve.
