500g pumpkin, sliced into thin pieces
100g lettuce, torn into pieces
50g cherry tomatoes, halved
50g goat cheese, cubed
2 tablespoons olive oil
Salt and black pepper, to taste
Olive oil vinaigrette: 1 tablespoon olive oil, 1 tablespoon apple cider vinegar, half a tablespoon honey, a dash of mustard, salt and black pepper to taste

Preheat the oven to 200°C. Coat the pumpkin slices evenly with olive oil, sprinkle with salt and black pepper, place on a baking sheet, and roast for about 20 minutes until golden and tender.
Tear the lettuce into pieces, halve the cherry tomatoes, and cube the goat cheese for later use.
Make the olive oil vinaigrette: Mix olive oil, apple cider vinegar, honey, mustard, salt, and black pepper until well combined.
In a large bowl, combine the lettuce, cherry tomatoes, and roasted pumpkin slices. Sprinkle with goat cheese, drizzle with olive oil vinaigrette, and gently toss to combine.
