200g frozen potato wedges
1 can tuna (in water)
2 pickles
½ cucumber
¼ onion
3 tbsp corn kernels
100g sugar-free yogurt
1 tbsp mayonnaise
1 tbsp yellow mustard
Lemon juice (to taste)
Black pepper & sea salt (to taste)
Scallions & nuts (for garnish)
👩🍳DIRECTIONS:
Roast potato wedges: Air fry/bake at 200°C for 15-20 mins until crispy, then chop.
Mix salad: Dice cucumber, pickles, and onion, then mix with tuna and corn.
Make dressing: Mix yogurt, mayo, mustard, lemon juice, pepper & salt.
Assemble: Toss salad with dressing, top with potato wedges, scallions & nuts.
