  • 200g frozen potato wedges

  • 1 can tuna (in water)

  • 2 pickles

  • ½ cucumber

  • ¼ onion

  • 3 tbsp corn kernels

  • 100g sugar-free yogurt

  • 1 tbsp mayonnaise

  • 1 tbsp yellow mustard

  • Lemon juice (to taste)

  • Black pepper & sea salt (to taste)

  • Scallions & nuts (for garnish)

👩🍳DIRECTIONS:

  1. Roast potato wedges: Air fry/bake at 200°C for 15-20 mins until crispy, then chop.

  2. Mix salad: Dice cucumber, pickles, and onion, then mix with tuna and corn.

  3. Make dressing: Mix yogurt, mayo, mustard, lemon juice, pepper & salt.

  4. Assemble: Toss salad with dressing, top with potato wedges, scallions & nuts.
