Roasted Lemon Rosemary Chicken with Potatoes is a delicious Western-style roast chicken dish that combines the freshness of lemon with the aroma of rosemary, making the roast chicken tender and juicy. It is even more delicious when paired with roasted potatoes.

  • 1 whole chicken (about 1.5 kg)

  • 1 lemon

  • 2 fresh rosemary sprigs

  • 4-5 garlic cloves

  • 4 medium-sized potatoes

  1. Wash the whole chicken thoroughly and pat it dry. Slice the lemon and squeeze the juice into a bowl, then stuff the lemon slices and rosemary into the chicken cavity.

  2. In a large bowl, mix olive oil, salt, black pepper, chopped garlic, and lemon juice until well combined. Rub the mixture over the chicken skin and inside the cavity.

  3. Place the chicken in the refrigerator to marinate for at least 2 hours, or overnight.

  4. Wash the potatoes, peel them, and cut into chunks. Toss them with a little olive oil, salt, and black pepper.

  5. Preheat the oven to 200°C (400°F).

  6. Spread the potato chunks on the bottom of a baking dish, and place the marinated chicken on top.

  7. Bake for 45-55 minutes, or until the internal temperature of the chicken reaches 74°C (165°F) and the surface is golden and crispy.

  8. Remove the roast chicken from the oven, let it rest for 10 minutes before carving, and serve with the roasted potatoes.
