  • Chili powder: 2g

  • Mixed spices: 3g

  • Black pepper: to taste

  1. Wash the whole lamb chops, pat them dry, and sprinkle with sea salt and black pepper. Let them marinate for 15 minutes.

  2. For the pistachio sauce and chopped pistachios: Combine 30g of pistachios, 30g of breadcrumbs, 5 cloves of minced garlic, 2g of chili powder, 3g of mixed spices, 2g of black pepper, 4g of salt, 8g of sugar, and 35g of butter. Blend until smooth to make the pistachio sauce. Chop the remaining pistachios slightly.

  3. Preheat the oven to 190°C.

  4. Heat some oil in a pan and sear the marinated lamb chops until their surfaces caramelize. Make sure to sear each side over high heat.

  5. Spread a layer of Dijon mustard sauce on the lamb chops, then coat them with the prepared pistachio sauce. Press down firmly and sprinkle with chopped pistachios.
