Stock or Water: 1000ml
Salt, Pepper, Soy Sauce: to taste
Chopped Scallions, Cilantro: a little

Prepare Ingredients: Soak rice noodles in warm water until softened; slice meat; wash vegetables; slice soaked shiitake mushrooms; cube tofu.
Cook Broth: In a pot, add stock or water and bring to a boil with shiitake mushrooms. Add meat slices and cook until they change color, skimming off any foam.
Add Rice Noodles: Incorporate the soaked rice noodles into the broth and cook for about 3-5 minutes until tender.
Add Toppings: Add vegetables and tofu, cooking until the vegetables are tender.
Season: Adjust seasoning with salt, pepper, and a little soy sauce to taste.
Garnish: Crack an egg into the soup (optional, as a poached egg or scrambled), and sprinkle with chopped scallions and cilantro.
