  • High-sugar tolerance dry yeast: 4g

  • Salt: 4g

  • Fine sugar: 20g

  • Pumpkin puree: 300g

  • Milk: 60g

  • Butter: 40g

  • Polish starter (prepared in advance): 100g high-gluten flour, 1g dry yeast, 100g cold water

👉🏻✨DIRECTIONS:

  1. Prepare the Polish starter at least 3 hours in advance by mixing high-gluten flour, dry yeast, and cold water, covering with plastic wrap, and letting it ferment in a warm place until it doubles or triples in size.

  2. Steam the pumpkin, mash it, and refrigerate it before use.

  3. Place all ingredients (including the Polish starter) except butter in a mixing bowl, mix at low speed until it forms a dough, then increase to high speed and knead until it becomes soft and can stretch into a thick membrane. Add butter.

  4. Mix at low speed until the butter is fully incorporated into the dough, then increase to high speed and knead for about 5 minutes until it can stretch into an elastic thin membrane.

  5. Shape the dough into a ball, place it in a bowl, cover with plastic wrap, and let it ferment in a warm and humid place for 1 hour until it doubles in size.

  6. Divide the dough into 6 equal portions, shape into balls, let them rest for 5 minutes, roll them into oval shapes, fold them into thirds, let them rest for another 5 minutes, roll them into 30cm long strips, roll them up from the top, and place them in a loaf pan.

  7. Let them undergo secondary fermentation at 36°C and 85% humidity until they are 90% full.

  8. Place them in the preheated oven on the lower middle rack, bake at 180°C for 35 minutes, take them out immediately after baking, shake the mold to release the bread, brush the top with butter, and let them cool before sealing for storage.
