Flour: 250g
Eggs: 2
Grated cheese powder: as needed
Butter: 50g
Fresh sage: as needed
Salt: as needed

Peel, seed, and cut the pumpkin into chunks. Steam until tender, which can be tested by easily piercing with a chopstick.
Mash the steamed pumpkin and add flour, eggs, and salt. Mix well and knead into a dough. Be mindful of the dough's moisture content and do not add too much pumpkin puree at once.
Roll the dough into a thin sheet, cut into strips, then roll into thin cylinders and finally cut into small segments to form gnocchi.
Sprinkle flour on a tray and dust each gnocchi with flour to prevent sticking.
Cook the gnocchi in boiling water until they float to the surface.
In a skillet, add butter and sage. Heat until the butter melts and bubbles form, then add the cooked gnocchi. Gently toss to coat with the butter and sage flavor.
Optionally, add a small amount of milk to thicken the sauce.

Be patient when kneading the dough, as it can be sticky but easily forms into a ball.
Add a spoonful of salt to the boiling water to make the gnocchi more chewy.
