Pumpkin puree: 120g
Cake flour: 80g
Eggs: 4
White sugar: 50g (for protein) + some (for yolk)
Corn oil: 35g
Lemon juice: a few drops (for whipping protein)
👉🏻✨DIRECTIONS:
Prepare Pumpkin Puree: Peel and deseed the pumpkin, cut into chunks, steam until soft, and mash into a puree.
Prepare Yolk Mixture: Beat the egg yolks, add corn oil and mix well, then add pumpkin puree and stir until combined. Sieve in the cake flour and mix until smooth with no lumps.
Whip Protein: Add a few drops of lemon juice to the egg whites, divide the white sugar into three portions, and whip until stiff peaks form.
Mix Batter: Pour half of the whipped protein into the yolk mixture and fold gently until combined, then pour the mixture back into the remaining protein and continue folding until smooth.
Bake: Pour the batter into a mold, tap to remove any large bubbles, place in a preheated oven, and bake at 170°C for 35 minutes.
Cool and Unmold: Remove from the oven, tap to release steam, invert to cool, and unmold once completely cooled.
