Pumpkin puree: 200g
Eggs: 2
Sugar: 50g
Yogurt: 120g
Melted butter: 50g
Vanilla extract: 1 tsp
Low/medium gluten flour: 190g
Salt: 1/2 tsp
Baking powder: 1/2 tsp
Baking soda: 1/4 tsp
Ground cinnamon: 1/2 tsp
Pumpkin spice (optional): 1/2 tsp
👉🏻✨DIRECTIONS:
Preheat the oven to 200°C (400°F).
In a large bowl, mix pumpkin puree, eggs, sugar, yogurt, melted butter, and vanilla extract until smooth.
In another bowl, combine flour, salt, baking powder, baking soda, ground cinnamon, and Pumpkin spice (if using). Add to the first bowl and mix until a thick batter forms.
Pour the batter into a loaf pan, filling it no more than 2/3 full.
Bake in the oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven, let cool, and slice to serve.
