Pumpkin and Chestnut Ciabatta is a delicious fusion of pumpkin and chestnut into the traditional Italian ciabatta bread. It retains the crispy crust and soft interior of ciabatta while adding the sweetness of pumpkin and the softness of chestnut, making every bite a treat for the taste buds.

  1. Prepare the Polish starter or sourdough starter by dissolving yeast in water and mixing with high-gluten flour. Let it sit at room temperature for 3-24 hours.

  2. Roast the pumpkin and chestnut separately, let them cool, and then cut into small pieces for later use.

  3. Prepare the main dough by mixing the Polish starter (or sourdough starter), cooked pumpkin puree, water, salt, olive oil, and then adding high-gluten flour to form a wet dough.

  4. Fold and rest the dough multiple times to allow it to ferment fully.

  5. Add the chestnut pieces to the dough and fold to evenly distribute them.

  6. Place the dough in a fermentation box and let it ferment at room temperature until it doubles in size.

  7. Pour out the fermented dough, sprinkle with dry flour, and shape it into a rectangle.

  8. Place the dough in the oven for the final fermentation for about half an hour.

  9. Preheat the oven to 225°C, place the dough in the oven, quickly spray water on the surface, and bake for 20 minutes, covering with aluminum foil halfway to prevent over-browning.
