  1. Prepare all the ingredients and let the cream cheese soften at room temperature by cutting it into small pieces.

  2. Preheat the oven to 230°C (top and bottom heat).

  3. Peel, seed, and cut the pumpkin into chunks. Steam until tender, then let it cool and blend into pumpkin puree.

  4. Mix the cream cheese, eggs, heavy cream, pumpkin puree, sugar, rum, low-gluten flour, and sea salt until smooth to form the cake batter.

  5. Line a 6-inch cake mold with baking paper. Pour in half of the cake batter, evenly spread the crushed chestnuts, and then add the remaining batter.

  6. Place in the preheated oven on the middle rack and bake for 25-30 minutes until the surface turns golden brown with focal spots.

  7. Remove from the oven and let it cool on a rack. Refrigerate for at least 4 hours before slicing and serving.
