Pork and Pumpkin Tofu Soup is a delicious and colorful homemade dish. It perfectly combines the sweetness of pumpkin, the smoothness of tofu, and the deliciousness of ground pork, creating a rich flavor and texture. This dish is a great choice for family dinners.

Pumpkin: 1/4 piece (about 500 grams)
Soft Tofu: 300 grams
Ground Pork: 150 grams
Ginger: 1 small piece
Garlic: 2 cloves
Green Onion: 1-2 stalks
Salt: to taste
White Pepper: to taste
Cornstarch: 1 tablespoon (mixed with a small amount of water for thickening)
Water: about 1500 milliliters
Cooking Oil: as needed
Cooking Wine: 1 tablespoon (optional, for enhancing flavor and removing fishy smell)
👉🏻✨DIRECTIONS:
Peel and seed the pumpkin, then cut it into small cubes. Cut the soft tofu in half, scoop out the tofu with a spoon, and place it in a bowl. Mince the ginger and garlic, and chop the green onion.
Heat a small amount of cooking oil in a pot, add the minced ginger and garlic, and sauté until fragrant. Add the ground pork, and stir-fry over medium-low heat until the meat changes color.
Add water to the pot, add the pumpkin cubes, bring to a boil over high heat, then reduce the heat to medium-low and simmer for about 10 minutes, or until the pumpkin cubes are soft.
Pour the cooked pumpkin cubes and some of the soup into the tofu bowl, gently stir to avoid crushing the tofu.
Pour the tofu-pumpkin mixture and the previously cooked ground pork back into the pot. Season with salt and white pepper to taste.
In a small bowl, mix 1 tablespoon of cornstarch with a small amount of water to make a cornstarch slurry. Once the soup boils again, slowly pour in the cornstarch slurry, stirring quickly while pouring, until the soup becomes slightly thickened.
Finally, add a few drops of sesame oil for flavor if desired. Bring to a boil, then turn off the heat and sprinkle with chopped green onion for garnish.
