👉🏻Ingredients list⚠️
Milk: 150 ml
Rolled oats: 1/3 cup (about 40 grams)
Pumpkin puree: 1/2 cup (about 120 grams)
All-purpose flour: 1/3 cup (about 50 grams)
White sugar: 1 tablespoon (about 14 grams)
Baking powder: 1/2 teaspoon (about 2 grams)
Salt: 1/4 teaspoon (about 1 gram)
Egg: 1
Vegetable oil: 1 tablespoon
👉🏻✨DIRECTIONS:
Warm the 150 ml of milk and pour it over the rolled oats, letting them soak for 5-10 minutes to soften.
Mix the all-purpose flour, white sugar, baking powder, and salt together. Add the egg and vegetable oil, and stir until combined.
Add the softened oats and pumpkin puree to the mixture, and continue stirring until well combined.
Heat a non-stick skillet over medium heat and pour in about 60 ml of batter, spreading it into a round shape.
When bubbles form on the surface of the pancake (about 1 minute), flip it and cook for another half to 1 minute on the other side, until both sides are golden brown.
Serve the pancakes with maple syrup or jam.

👉🏻✨TIPS
Do not skip the step of soaking the oats, as it helps to make the pancakes softer.
Use a non-stick skillet to cook the pancakes to prevent them from sticking.
Pour the batter into the skillet in one go; do not use a spoon to spread it out, as the batter will spread automatically.
