Digestive biscuits 140g
Unsalted butter 100g
Cheesecake Filling:
Cream cheese 400g
Fine granulated sugar 68g
Unsalted butter 68g
Lemon juice, to taste
Lemon zest, to taste
Heavy cream 40g
Eggs 1

Place the digestive biscuits in a sealed bag and crush them. Add the melted unsalted butter and mix well. Pour the mixture into the mold and press it down to form an even layer. Chill in the refrigerator.
Let the cream cheese soften at room temperature and stir until smooth. Add the fine granulated sugar, heavy cream, unsalted butter, egg, lemon juice, and lemon zest. Mix until well combined.
Pour the mixture into the mold. Place it in the oven and bake using the water bath method at 180°C for 35 minutes.
After baking, let the cheesecake cool slightly before refrigerating it.
Whip some heavy cream to your liking and pipe it onto the cake. Decorate with fruits as desired.
