200g fresh mushrooms
3 eggs
Salt, to taste
A little soy sauce
Chopped scallions, to taste

Wash the fresh mushrooms and slice them for later use.
Beat the eggs in a bowl and add a little salt, stirring well.
Heat vegetable oil in a pan, pour in the beaten eggs, and cook until they solidify into blocks. Remove and set aside.
Leave some oil in the pan, add chopped scallions and sauté until fragrant, then add the sliced mushrooms and stir-fry until they soften.
Pour the cooked egg blocks back into the pan, add a little soy sauce for seasoning, and stir-fry evenly until ready to serve.
