  1. Preheat Oven: Preheat the oven to 190°C (180°C fan-assisted).

  2. Prepare Marinade: Mix 35g of butter, miso, maple syrup, grated ginger, grated garlic, and chopped red chili together until well combined.

  3. Prepare Chicken: Place the whole chicken in a roasting tin and pat its skin dry with kitchen paper.

  4. Apply Marinade: Carefully separate the skin from the flesh of the breast and stuff ⅔ of the marinade under the skin. Spread the remaining marinade over the chicken and season with salt and black pepper.

  5. Roast: Roast the chicken in the preheated oven for 90 minutes, checking occasionally. If it becomes too dark, cover it loosely with foil.

  6. Add Onions: With 40 minutes of roasting time remaining, add the onions to the tin around the chicken. Dot the remaining 20g of butter over the onions, turn them in the cooking juices, and return the tin to the oven. If using foil to cover the chicken, do not cover the onions.

  7. Rest: Once cooked, remove the chicken from the oven, cover it with foil and tea towels, and let it rest for 15 minutes.

  8. Serve: Scatter with sesame seeds and serve with rice and stir-fried green vegetables.
