Place a deep pot or cast-iron skillet on the stove, and add Italian sausage, minced garlic, and diced onion.
Crush the sausage and cook until browned.
When the sausage is fully cooked and the onion is soft, add beef broth, carrot slices, celery pieces, red potato cubes, and bell pepper cubes.
Add seasonings: Italian seasoning blend, oregano, basil (as needed), salt, and pepper (adjust the salt based on the saltiness of the beef broth).
