Filling: 300g ground pork, half a head of Chinese cabbage (finely chopped and water-pressed), finely chopped ginger and green onion, salt, soy sauce, dark soy sauce, sesame oil, pepper to taste

Make Dough: Place all-purpose flour in a bowl. Gradually add water, stirring as you go, until the flour forms clumps. Knead into a smooth dough, cover with a damp cloth, and let it rest for 30 minutes.
Prepare Filling: In the ground pork, add finely chopped ginger and green onion, salt, soy sauce, dark soy sauce, sesame oil, and pepper. Mix well in one direction. Add the water-pressed, finely chopped Chinese cabbage and continue mixing.
Wrap Dumplings: Roll the rested dough into a long strip, cut into small portions, and roll each into a circular dumpling wrapper. Place an appropriate amount of filling in the center of each wrapper, fold in half, and pinch the edges tightly to seal, shaping into a half-moon or other preferred forms.
Cook Dumplings: Bring a pot of water to a boil. Add the dumplings, gently stirring to prevent sticking. When the dumplings float to the surface and the skin becomes transparent, cook for an additional 2-3 minutes before scooping out.
