  • Scallops: 500g

  • Morels: 100g

  • Beans and peas: as needed

  • Pine nut cream: as needed

  • Karachi (Japanese mustard): as needed

  • Malt: as needed

  • Ginger, garlic, and scallions: as needed

  • Chili oil and Sichuan pepper oil: as needed

  • Salt, sugar, cooking wine, and soy sauce: as needed

  1. Clean the scallops and marinate them with cooking wine and salt for 10 minutes.

  2. Slice the morels and blanch them with beans and peas. Set aside.

  3. Heat oil in a pan, add ginger, garlic, and scallions, and sauté until fragrant. Add chili oil and Sichuan pepper oil to cook out the red oil.

  4. Add the marinated scallops and quickly stir-fry until they change color.

  5. Add the blanched morels, beans, and peas, and stir-fry evenly.

  6. Pour in the sauce made from pine nut cream, Karachi, and malt, and continue to stir-fry until the sauce thickens.

  7. Before serving, season with salt and sugar, and sprinkle with chopped scallions.
