Prepare Pork Ribs: Wash the pork ribs, cut into small pieces, and pat dry with kitchen paper.
Marinate: In a large bowl, combine pork ribs, minced garlic, minced ginger, soy sauce, dark soy sauce (if using), cooking wine, sugar, salt, and peppered salt. Mix well and marinate for at least 30 minutes to allow the ribs to fully absorb the flavors.
Coat with Cornstarch: Add cornstarch to the marinated pork ribs and gently stir to coat them evenly with a thin layer of cornstarch slurry.
