  • Garlic, chili flakes, Sichuan peppercorns (as needed)

  • Coriander, shredded green and red peppers, shredded onion (as needed)

  • Cooking oil (as needed)

  1. Clean the fish, remove scales and intestines, and make several cuts on both sides to allow the seasoning to penetrate.

  2. Marinate the fish with ginger slices, scallion segments, cooking wine, light soy sauce, dark soy sauce, salt, sugar, and pepper for at least 30 minutes.

  3. Preheat the oven to 200°C. Place the marinated fish on a baking tray, brush with cooking oil, and bake in the middle rack of the oven for 15 minutes.

  4. While the fish is baking, heat an appropriate amount of cooking oil in a pan and add garlic, chili flakes, and Sichuan peppercorns to create a spicy sauce.

  5. Remove the grilled fish, sprinkle with coriander, shredded green and red peppers, and shredded onion, then pour the spicy sauce over it. Bake for an additional 5 minutes.
