  1. Wash the fish and make a few slashes on it. Add cooking wine, salt, and ginger slices. Rub them evenly all over the fish and marinate for 30 minutes.

  2. Heat oil in a pan and fry the fish until both sides are golden brown. Move the fish to the side of the pan, add ginger and garlic slices, and chili peppers. Add 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, an appropriate amount of white liquor, and half a bowl of water. Cook until the sauce thickens (turn the fish over halfway through).
