French Crème Brûlée, this classic French dessert, is beloved for its unique texture and sweet flavor.   1. Preheat the oven to 140°C.

  2. Slice the vanilla bean lengthwise and scrape out the seeds. Combine with milk and heavy cream in a saucepan and heat gently until almost boiling, without actually boiling.

  3. Whisk the egg yolks and sugar together, then pour into the vanilla milk mixture, continuing to heat gently for 5-8 minutes, without boiling.

  4. Strain the pudding mixture and pour into ramekins. Place the ramekins in a baking dish filled with hot water halfway up the sides of the ramekins.

  5. Bake in the middle of the preheated oven for 35-40 minutes. Remove and let cool to room temperature, then refrigerate for at least 3 hours.

  6. Before serving, sprinkle sugar on top and caramelize using a blowtorch or the broiler function of the oven until golden brown.
