Boil a pot of water, blanch the flower clams for 20 seconds, then remove and let them drain to help release any remaining sand.
Wash the scallions and cut them into threads; slice the ginger.
Pour water into a wide pot, bring to a boil, then add sesame oil, ginger slices, and winter melon. Boil, then reduce the heat and simmer for 10 minutes.
Add the flower clams, cook for another 2-3 minutes, then season with sesame oil, scallion threads, and salt before serving.
