Clean the shrimp, remove the shrimp legs, whiskers, and spears, pick out the shrimp intestines from the back, drain the water, add cooking wine, and marinate for 10 minutes.
Prepare the side dishes, such as sliced potatoes, cucumber segments, chopped coriander, scallions, ginger, and garlic.
Heat oil in a pan, and when the oil reaches five-tenths heat, add the shrimp and fry over low heat until the shrimp shells wrinkle slightly, then remove and set aside.
Leave a small amount of oil in the pan, add Sichuan peppercorns and stir-fry until fragrant, then add chili sauce and stir-fry until the red oil appears, add chili peppers, ginger strips, scallions, and garlic, and stir-fry evenly.
Add the sliced potatoes and stir-fry, then add the fried shrimp, pour in soy sauce, sugar, and cooking wine, cover the pan and let it simmer for a while.
Finally, add cucumber segments and rice cakes, stir-fry evenly, sprinkle with white sesame seeds and coriander, and serve.
