  • Onion 1, chopped

  • Garlic 3 cloves, chopped

  • Tomatoes 2, chopped

  • Carrot 1, chopped

  • Green Pepper 1, chopped

  • Vegetable Broth 500ml

  • Tomato Paste 2 tablespoons

  • Spices (such as bay leaves, black pepper, salt, etc.) to taste

  • Olive Oil 2 tablespoons

  • Potatoes 2, sliced

  • Cheese (optional) shredded, to taste

  1. Heat olive oil in a pot and add chopped onion and garlic, sauté until softened.

  2. Add chopped tomatoes and carrots, continue to sauté for a few minutes.

  3. Add lentils and green pepper, pour in vegetable broth, add tomato paste and spices, stir well.

  4. Cover the pot and simmer for about 20 minutes, until lentils and vegetables are tender.

  5. In another pan, fry the potato slices until golden brown and set aside.

  6. Pour the cooked lentil and vegetable mixture into a baking dish, top with potato slices and shredded cheese (if using).

  7. Place in a preheated oven at 200 degrees Celsius and bake for about 10 minutes, until the cheese is melted and the surface is golden brown.
