Prepare the pasta: Cook the pasta shells until al dente, then drain and set aside.
Prepare the filling: Wash the fresh spinach, blanch it in boiling water, then squeeze out the excess water and chop it finely. Chop the onion and garlic, sauté them in olive oil until fragrant, add the chopped spinach and stir well. Let it cool. In a large bowl, mix the ricotta cheese, cooked spinach, salt, and black pepper until well combined to form the filling.
