  1. Prepare a fresh piece of streaky pork and place it in a pot with cold water. Add ginger slices, green onion segments, and appropriate amount of cooking wine. Boil for about 5 minutes to remove blood and odor.

  2. Remove the boiled pork and pierce its skin with toothpicks to make small holes, allowing it to become crispier during baking.

  3. Rub a layer of salt on the skin of the pork, then turn it over and make a few cuts on the meat side, being careful not to cut through the skin.

  4. Prepare the marinade by mixing appropriate amounts of salt, five-spice powder, pepper, soy sauce, and sugar. Apply the marinade to the pork and let it marinate for about an hour to fully absorb the flavors.

  5. Wrap the marinated pork in tin foil, exposing only the skin. Brush a layer of white vinegar on the skin and sprinkle with a layer of baking soda.

  6. Place the prepared pork in a preheated oven and bake at 200°C for 30 minutes. Then remove it, increase the temperature to 230°C, and continue baking for 20-30 minutes until the skin is golden and crispy, and the pork is fully cooked.

  7. Remove the baked crispy pork, cut it into small pieces, and serve.
