1 carrot (diced)
1 potato (peeled and diced)

Heat a small amount of olive oil in a pot and sauté the onion and garlic until softened.
Add the carrot and potato dices, continue to sauté for a few minutes until the vegetables are lightly browned on the surface.
Pour in the chicken or vegetable broth, bring to a boil over high heat, then reduce to low heat and simmer for about 15 minutes until the vegetables are tender.
Add the corn kernels and continue to cook for 5 minutes.
Slowly pour in the milk and heavy cream, stirring to combine, and continue heating without boiling to prevent the cream from separating.
