Cold Tofu Spinach Salad is a delightful summer dish that combines vibrant green color, refreshing taste, and a tangy dressing, making it a favorite on many dining tables. 500g tofu spinach (water spinach)
3 cloves garlic, minced
1 red chili pepper, sliced (optional)
2 tablespoons soy sauce
1 tablespoon rice vinegar
½ teaspoon sugar
Salt to taste
A few drops of sesame oil
Adequate amount of peanut oil or sesame oil

Prepare Ingredients: Wash the tofu spinach, remove old leaves and stems, and cut into 5cm lengths.
Blanching: Bring a pot of water to a boil, add a pinch of salt and a few drops of oil to maintain the spinach's bright green color. Blanch the tofu spinach for about 30 seconds to 1 minute, then immediately rinse with cold water, drain well.
Make Dressing: In a large bowl, mix minced garlic, sliced red chili pepper, soy sauce, rice vinegar, sugar, salt, and sesame oil to create a dressing.
Toss: Add the blanched tofu spinach to the dressing and gently toss to coat each leaf evenly.
Serve: Plate the dressed tofu spinach and drizzle with adequate peanut oil or sesame oil for added aroma before serving.
