  • Chicken thighs or breast meat 500g

  • Dried chilies 50g

  • Sichuan peppercorns 10g

  • Garlic 30g

  • Ginger 20g

  • Cooking wine, soy sauce, dark soy sauce, sugar, salt (to taste)

  1. Cut the chicken into pieces and marinate with cooking wine and soy sauce for 20 minutes.

  2. Cut the dried chilies into small segments, and slice the Sichuan peppercorns, garlic, and ginger.

  3. Heat a pan with cold oil, add the Sichuan peppercorns, and fry until fragrant. Remove and discard.

  4. Add the dried chili segments and fry on low heat until fragrant.

  5. Add the marinated chicken pieces, stir-fry on high heat until the chicken changes color.
