2 pounds (about 900 grams) bone-in, skin-on chicken pieces (such as thighs or wings)

1/4 cup olive oil
2 cups Yukon Gold potato wedges (or your preferred potato variety)
1/2 onion, chopped
5 cloves garlic, sliced
2/3 cup dry white wine
2/3 cup chicken stock
2 tablespoons fresh parsley, chopped
1 tablespoon Italian seasoning
1 tablespoon butter (or more as needed)
1/2 cup frozen peas (optional, for garnish and texture)


Chicken Vesuvio is a classic Italian dish renowned for its unique cooking method and rich flavor. Prepare Chicken: Wash and dry the chicken pieces, then season them generously with salt and black pepper.
Fry Chicken: In an oven-safe skillet, heat olive oil over medium heat. Add the chicken pieces, skin-side down, and cook until the skin is crisp, about 5-7 minutes. Turn over and cook until golden brown on the other side, about 4-5 minutes. Remove the chicken and set aside.
Cook Vegetables: In the same skillet, add the potatoes, onion, and garlic. Cook until the onion is translucent and the potato wedges start to brown nicely on the cut sides, about 5-7 minutes. Remove the vegetables and set aside.
Make Sauce: Pour white wine into the skillet and cook until reduced by half, scraping the browned bits of food off the bottom of the pan with a wooden spoon.
Assemble and Bake: Return the potatoes, onion, and garlic to the skillet. Stir in chicken stock, parsley, and Italian seasoning. Place the chicken pieces on top. Cover with an oven-safe lid and bake in a preheated oven at 200°C until the chicken is cooked through and no longer pink at the bone, about 45 minutes. An instant-read thermometer inserted near the bone should read 74°C (165°F).
Finish Sauce: Return the skillet to the stove, remove the chicken and vegetables, leaving the liquid. Bring the liquid to a simmer, add butter, and stir until smooth, about 5 minutes. Season with salt and black pepper to taste. Add peas and cook 1-2 minutes longer.
Serve: Place the chicken pieces on top of the potato wedges, and pour the sauce and peas over them. Enjoy!
