Boil Bucatini pasta in salted water until al dente (firm to the bite).
Heat olive oil in a skillet and sauté the finely chopped Guanciale until transparent.
Pour in dry white wine and evaporate most of the alcohol.
Add diced tomatoes, dried peppers, black pepper, and a pinch of salt, stir-fry for a few minutes.
Add a ladle of pasta water, cover, and simmer.
Taste a piece of pasta; once cooked to your preference, add the pasta to the skillet and mix well.
Serve and sprinkle with Pecorino cheese.
