  • Adequate water

  • A pinch of salt

  1. Wash the pork trotters and cut them into pieces. Blanch them in boiling water to remove blood and foam, then drain and set aside.

  2. Heat a small amount of oil in a pot, add rock sugar, and stir-fry over low heat until melted and caramelized.

  3. Add the pork trotter pieces, stir-fry evenly until coated with the caramel color.

  4. Add ginger slices, green onion sections, star anise, and bay leaves, continue stir-frying until fragrant.

  5. Pour in appropriate amounts of cooking wine, light soy sauce, and dark soy sauce, stir-fry evenly.

  6. Add enough water, bring to a boil over high heat, then reduce to low heat and simmer for about 1.5 to 2 hours until the pork trotters are tender.

  7. Season with salt to taste, increase the heat to thicken the sauce, and serve.
