Ingredients:
Pig trotters, white beans, peanuts, rock sugar, fermented red bean curd, star anise, dried chili peppers, beer

⭕Instructions

  1. Soak the white beans and peanuts in advance. Boil the pig trotters in cold water with ginger, scallions, and cooking wine.

  2. Heat a pan with cold oil, add rock sugar, and stir-fry until the sugar turns golden brown. Add the pig trotters, stir-fry evenly to coat with the caramelized sugar, then add ginger slices and stir-fry for a moment. Add 8 pieces of fermented red bean curd and stir-fry evenly.

  3. Add star anise and dried chili peppers. Pour in the sauce mixture (2 tbsp light soy sauce, 2 tbsp dark soy sauce, 1 tbsp oyster sauce) and stir-fry evenly. Add peanuts and white beans, and stir-fry evenly.

  4. Transfer all the ingredients into a casserole pot. Pour in a can of beer and add an appropriate amount of boiling water. Bring to a boil over high heat, then reduce the heat to low and simmer for 2 hours, stirring occasionally. Add boiling water if necessary to prevent the pot from drying out. Before serving, sprinkle with chopped scallions. Enjoy!
