  • Milk 120g

  • Low-gluten flour 55g

  • Butter 60g

  • Eggs 6

  • Fine sugar 55g

  1. Combine milk and cheese in a blender and blend for 1 minute. Add butter and blend for another 30 seconds until smooth and free of particles.

  2. Separate the yolks from the whites. Add the yolks to the cheese mixture and stir until well combined.

  3. Add low-gluten flour and stir until smooth.

  4. Beat the egg whites in three additions with fine sugar until they form stiff peaks with deep streaks.

  5. Gradually fold the beaten egg whites into the cheese mixture, gently folding from the bottom up.

  6. Preheat the oven to 180°C with a water bath. Place the cake in the preheated oven and reduce the temperature to 130°C, baking for 50 minutes.

  7. After baking, let the cake cool in the oven for one hour before removing. Let it cool completely before decorating.
